Cashew Cream Cheese

Prep Time: 5 minutes Cook time: 30 minutes Serves: 4-6

This is a quick cream cheese that we use for several different recipes. They add an excellent creamy texture. You could even use it on its own as a buttery spread!

Cashews are very rich in fats, and so we tend to add them conservatively.


  • 3/4 raw cashews
  • 1 tablespoon almond milk (more if necessary to smooth)
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar


  1. Boil cashews for a half hour.
  2. Strain them, and put them in a food processor on high with remaining ingredients until smooth. Add more liquids if necessary, balancing them to flavor.
