Nacho Cheese

This simple cheese sauce is like magic! Let’s show you how to transform a couple simple ingredients (one of which is, of all things, a carrot) into a nacho cheese sauce, no alchemy required.


  • One large carrot or two medium carrots, boiled
  • One medium potato, boiled or microwaved (if microwaving, leave skin while microwaving and peel after)
  • 1 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt


  1. Remove skin from potato.
  2. Place potato and carrot into food processor and mix well. Add water as needed to create smooth consistency.
  3. Add other ingredients and process until thoroughly mixed.
