This is a quick cream cheese that we use for several different recipes. They add an excellent creamy texture. You could even use it on its own as a buttery spread!
Cashews are very rich in fats, and so we tend to add them conservatively.
- 3/4 raw cashews
- 1 tablespoon almond milk (more if necessary to smooth)
- 1 tablespoon lemon juice
- 1 tablespoon vinegar
- Boil cashews for a half hour.
- Strain them, and put them in a food processor on high with remaining ingredients until smooth. Add more liquids if necessary, balancing them to flavor.
