Just when you think you’ve seen every chickpea idea, from Roasted Chickpeas and Maple Glazed Chickpeas, there’s another off-the-wall idea! This peanut cookie hummus is delicious, and goes well with freshly sliced fruit.
We’re always looking for a quick, simple recipe to bring along to family events or potlucks, and this one is sure to start some conversation!
Ingredients
- 1 can chickpeas, drained and rinsed
- ¼ cup almond milk
- ¼ cup maple syrup
- ⅓ cup peanuts
- ¼ crushed Baker’s chocolate
Instructions
- Take the chickpeas, milk, maple syrup, and peanuts, and blend thoroughly. We’re not satisfied until it’s blended for about 45 seconds to a minute. If necessary, stop and scrape down the sides of the blender. If the resulting consistency isn’t quite smooth enough, add more milk and blend longer.
- Add the crushed Baker’s chocolate to the mixture. Blend briefly, but only long enough the chocolate is mixed in, not totally pulverized—you want some larger pieces distributed throughout!
- Serve with sliced fruit.
