Peanut Cookie Hummus

Just when you think you’ve seen every chickpea idea, from Roasted Chickpeas and Maple Glazed Chickpeas, there’s another off-the-wall idea! This peanut cookie hummus is delicious, and goes well with freshly sliced fruit.

We’re always looking for a quick, simple recipe to bring along to family events or potlucks, and this one is sure to start some conversation!

Ingredients

  • 1 can chickpeas, drained and rinsed
  • ¼ cup almond milk
  • ¼ cup maple syrup
  • ⅓ cup peanuts
  • ¼ crushed Baker’s chocolate

Instructions

  1. Take the chickpeas, milk, maple syrup, and peanuts, and blend thoroughly. We’re not satisfied until it’s blended for about 45 seconds to a minute. If necessary, stop and scrape down the sides of the blender. If the resulting consistency isn’t quite smooth enough, add more milk and blend longer.
  2. Add the crushed Baker’s chocolate to the mixture. Blend briefly, but only long enough the chocolate is mixed in, not totally pulverized—you want some larger pieces distributed throughout!
  3. Serve with sliced fruit.
