Mushroom Gravy

Prep Time: 5 minutes Cook time: 10-15 minutes Serves: 4-6

This gravy is an excellent addition to Thanksgiving dinner, but it’s delightful year round. (Kati: This is literally the best gravy I’ve ever tasted. Ladle this over a microwaved potato for a quick, delicious meal.)

Ingredients

  • 2 1/2 cups vegetable broth
  • 1 small onion, diced
  • 3 or 4 button mushrooms diced (optional)
  • 1/3 cup brown rice flour (or preferred/available flour)
  • 1 tbsp soy sauce / tamari
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp powdered garlic

Instructions

  1. Saute onions and mushrooms in 1/3 cup vegetable broth over medium heat until onions are translucent.
  2. Add all remaining ingredients.
  3. Bring to a boil.
  4. Cook over medium-high heat for ten to fifteen minutes, stirring regularly, until gravy begins to thicken. It will thicken more upon standing.
