Maple Glazed Chickpeas

Let’s face it: Chickpeas are a miracle food!

Roasted Chickpeas were a game changer for me seven years ago, and have made their way into all manner of hiking and gym snack, not to mention forming the basis for countless dinners. Chickpeas are responsible for hummus (even Peanut Cookie Hummus), and the drained juice (or aquafaba) from a can of chickpeas even makes a serviceable egg substitute.

Maple glazed chickpeas are just one more way chickpeas can add flavor to your life. These (or their roasted cousins) make an excellent treat to bring along to gatherings and potlucks.

Ingredients

  • 15 ounces chickpeas, drained and rinsed (1 standard can)
  • 2 tbsp maple syrup
  • ½ tsp liquid smoke
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ½ tsp cayenne pepper
  • ¼ tsp salt (optional)

Instructions

  1. Preheat oven to 425°.
  2. Place your rinsed chickpeas in a small mixing bowl.
  3. Pour maple syrup over the chickpeas. Add the other spice ingredients. Mix the chickpeas well until they’re evenly coated.
  4. Scoop the chickpeas out of the bowl onto a cookie sheet, leaving a bit of syrup and spice mixture in the bottom of the bowl.
  5. Bake for 15-20 minutes, or until the chickpeas are beginning to firm up.
  6. Remove the chickpeas, pour the remaining sauce over them, and use a wooden spoon or other implement to mix and coat the chickpeas again.
  7. Bake a further 10-15 minutes, or until the chickpeas begin to crisp.
  8. They can be served on their own, or they can be served with a meal or salad. Enjoy!

    • We use Stubbs brand liquid smoke, which is readily available at most grocery stores in the condiments section. Most any brand will do—we just like the Hickory flavors.

      If for any reason you don’t have access to liquid smoke, you could also substitute smoked paprika for paprika—most grocery stores carry that as well.

      To my knowledge, manufacturing your own liquid smoke is a somewhat involved process at home!
